Tapioca Buns (Makes 12-16)

In a blender or food processor place in this order

(2.2oz) 66g cheddar cheese (or any other hard cheese), grated (we use the food processor to grate it)
1 egg
6oz (170g) tapioca flour
2/3 cup (160ml) whole milk
1/3 cup (80ml) olive oil
1 tsp salt

Pour mixture into silicon baking tart let pans or muffin pans and bake at 400F (moderately hot oven) for 20 mins. Delicous hot our of the oveb, they become even more bread-like the next day. Store covered in the fridge or freezer.

You can even use this batter for a pizza crust.
